Slow Cooker Beer Basted Roast Beef

My family loves roast beef, but this slow cooker beer basted roast beef recipe is hands down their favorite, and I have to admit that there is nothing more delicious than tender roast beef cooked in beer. The beer makes the beef oh so tender and really adds to the delicious flavor.

This recipe is equally good made in the oven but using your slow cooker just makes things all the easier especially for those days when you're just too busy for cooking, but you would like to give your family a hearty and delicious meal with a minimal amount of time spent in the kitchen.

Many people like to sear their roast beef before cooking as it helps to develop more complex flavors. But for slow cooker beer basted roast beef, I really can't taste the difference, so I usually skip this step in order to save a little time.

Ingredients:
3-4 lb. chuck roast
1/4 teaspoon minced garlic
1 vidalia onion chopped
1 pkg. of onion soup mix or brown gravy mix
2- cans of beer
salt & pepper to taste

Season your roast with salt and pepper before placing it in the slow-cooker. Next, add the minced garlic and chopped onions. Sprinkle the onion soup or brown gravy over the top and then pour in the beer. Finally, set your crockpot to low and allow it to cook for approx. 6-8 hours or until the meat is fall-apart tender. Then serve with mashed potatoes or rice.

* The leftover juice can be used for au jus or for gravy.
