Crispy and Tender Air Fryer Fried Chicken

I'm relatively new to cooking in an air fryer, but when I got the chance to review this Instant Vortex Plus  6 Quart 6-1 Multi-Use Air Fryer, I jumped right in with a recipe for fried chicken and the results was surprisingly delicious.

I've always loved fried chicken, and I really couldn't see how an air fryer could do it justice. So I was really surprised at just good it turned out. It was crispy on the outside and juicy and tender on the inside.

For this recipe, I picked up a package of boneless chicken thighs, and in a little over 30 minutes, which is counting prep time, we had a delicious basket of fried chicken. And after one bite, I was completely hooked, it might not be quite as good as pan-fried chicken, but it's pretty darn close!

I will say though that this recipe is best when served right away; otherwise, you will lose that delicious crispiness, the flavor is still good, but it won't be as crispy, so you might want to that into consideration when planning out your meal. I did include a  couple of pictures of my fried chicken but do have to warn you that I'm not the best at picture taking.

Ingredients:
1 pkg. chicken thighs
Oil for spraying your chicken and the bottom of the fryer to keep your chicken from sticking.

1/2 cup buttermilk


Seasoning:
1 cup flour
2 1/2 teaspoon seasoning salt (Lawry's)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper

Instructions:
1. Place your chicken in the buttermilk and allow to marinate for at least one hour.
2. Spray the inside of your air fryer basket
3. Mix together your flour and seasonings
4. Coat the chicken in the flour and seasoning mix, taking care to shake off any excess before placing in your air fryer basket.
5. Make sure that there's a little space between each piece of chicken so that they are not touching. This will ensure that they cook better.
6. Lightly mist your chicken pieces with oil ( either butter or olive)
7. Set your air fryer to 350 degrees for 22 minutes and set a timer for 11 minutes.
8. After 11 minutes, turn your chicken pieces over and again lightly mist with oil. Your goal here is to make sure that there are no white patches of flour on the chicken.
9. When the timer goes off, test for doneness by checking the temperature of the chicken. Chicken is done when it has an internal temperature of 165 degrees.
10. Serve right away because air fried chicken doesn't stay crispy.
